Mom Monday Recipe



It's a Linky over at Thinking of Teaching to link up with some yummy recipes that you can feed your family/kids!

This is one that is like a staple in my  house...it's a Pampered Chef recipe (I use a lot of those recipes..or derivatives of.)....and this is a great one to get the kids to each veggies...I do a lot of these. In fact, I think I might just make that my trend each week; to give you recipes that'll get the family to eat more veggies. I do it to my husband too, and he has no idea! ha!!


Quick and Creamy Mac ‘n Cheese

From 29 Minutes to Dinner Volume 2, Pampered Chef


16 oz. uncooked medium shell pasta

1 pkg. (12 oz.) frozen butternut/winter squash, thawed

1 can (12 oz) evaporated milk

2 cups shredded six cheese Italian cheese blend

1/8 tsp ground nutmeg

1/2 tsp salt


Cook pasta according to package directions.  Remove 1/4 cup of the cooking water for later use.  Drain pasta and set aside.

For sauce, place squash into saucepan, gradually add milk, whisking constantly.  Cook over medium high heat 3 - 4 minutes or until mixture begins to simmer.  Reduce heat to medium.  Add cheese and cook for 3 - 4 minutes or until cheese is melted and mixture returns to a simmer, whisking constantly.  Add nutmeg, salt and reserved cooking water; stir until smooth.  Add sauce to pasta; mix to coat.

They both got shots - Autumn took it like a champ! No crying at all!!
And Brooklynn has grown a whole inch!! And gained almost 15 ounces!! What a great eater!!

Love mac and cheese and will def have to try to this!!!
And your girls are too cute. Autumn is so brave! I still find myself running around the room trying to find a place to hide if I know a shot is involved. :)

Those girls are something else! I wish I could get my 2 year old to sit that still when she's at the doctor. She absolutely hates that crunchy sounding paper!! Love some mac and cheese, good comfort food!

haha! I didn't have a video of how she was rummaging though all the cabinets and climbing on chairs and turning off the lights! lol...thankfully, the dr thought she was just a typical 2 year old...lol
